ONION PAKODA

                          ONION PAKODA

Ingredients:
Besan flour-1 cup
Rice flour-1/2 cup
Onion(big)-1 (thinly sliced)
Green chilli-2 roughly chopped
Curry leaves-1 handful
Saunf-1 tsp
Ginger garlic paste-1/2 tsp
Garlic 3 pods-crushed with skin.
Chilli powder-1 tsp
Turmeric powder-1/4 tsp
Asafoetida/Hing-1/2 tsp
Salt-to taste
Oil- for deep frying and mixing the dough.

Method:
1.Dry roast the besan and rice flour together till u get a nice aroma and let it cool down.
2.Transfer the roasted powder to a bowl and add curry leaves, turmeric powder, chilli powder, salt,ginger garlic paste,asafoetida and blend.
            
3.Add sliced onion,crushed garlic, saunf,green chilli,2-3tbsp of hot oil and mix.
           

                     
4.Sprinkle water little by little and blend to form a crumbly dough.
                     

             
5.Heat oil in a kadai and add chunks of dough,here and there roughly,to have a crispy texture.
6.Turn to all the sides and fry till golden and crisp.
             

                      
7.Remove and drain the excess oil.
8.Serve hot and crisp pakoda with a cup of tea.

KAADAI (QUAIL) PEPPER ROAST

                   KAADAI PEPPER ROAST

Ingredients:
Kaadai/Quail-2 
Onion-1 big size or 2 medium size.
(Cut into thin slices)
Garlic-5 pods(thinly sliced)
Sesame oil-2tbsp
Masala Ingredients:
Ginger garlic paste-1 tsp
Pepper cumin powder (roasted)-3 tsp
Saunf powder-1 tsp
Turmeric powder-1tsp
Garam masala powder-1 tsp
Salt-to taste 

Pepper powder-2tsp
Curry leaves- For garnish 


Method:
1.In a kadai,add sliced onion and garlic and saute till crisp and brown.
2.To this,add all the items under masala ingredients and saute till the raw smell goes off.
3.Add 2 small cups of water and let it boil.
4.Add the kaadai pieces and turn it both the sides.
5.Close the lid and let it cook and let all the water reduce and thicken.
6.Add pepper powder and curry leaves and roast till it dries up. 
7.Transfer it to a serving bowl and garnish with curry leaves. 
8.Enjoy with hot rasam or sambar rice.

EGGLESS HONEY CAKE (IYENGAR BAKERY STYLE)

                           HONEY CAKE
Ingredients:
All purpose flour/Maida- 1 1/4 cup
Sugar-1/2 cup
Baking powder-1 tsp
Baking soda-1/4 tsp
Thick curd-3/4 cup
Vanilla essence -1 tsp
Water-1/4 cup
Salt-1/4 tsp
Oil-1/4 cup

For the jam icing:
Strawberry/Mixed fruit jam-1/2 cup
Honey-2 tsp
(Blend jam and honey in a mixie jar to make a puree)

For outer covering:
Dry grated coconut/Dry Coconut powder(Coarse)-1/2 cup
Sugar water-for sprinkling(Mix 2 tbsp of sugar with 1/4 cup of water)


Method:
Pre-heat the oven @180°C/350°F for 10 mins.
Make 2 thin cakes for a layer cake or make a big cake and cut into 2 equal horizontal slices.
1.Sieve all purpose flour, baking powder, baking soda together.
2.In a bowl,add sugar,curd and blend well.

3.Add water,essence,salt and oil and mix well.
4.Add the sieved flour spoon by spoon and fold with the wet ingredients.
5.Finish all the flour and blend by cutting and folding.
 
6.Grease a baking pan and transfer the mixture.
7.Bake @ 180°C/350°F for 25-30 mins.( or)
   until the tooth pick inserted in the centre of the cakes comes out clean.
8.When the cake reaches the room temperature,demould the cake from the pan and place in the working plate.
        

9.Place the first layer of cake and sprinkle some sugar water.
         
10.Apply jam filling and place the second layer and cover with jam filling all over and around the cake.

11.Sprinkle the grated coconut all over the cake.



12.Cut into slices.



13.Honey cake is ready to serve.

Note:
●If  you are making a single layer cake,you can apply the jam only on the top ,cut into pieces and dip the sides in sugar syrup and damp in grated coconut.
●Mine was a thin cake,so cut it vertically and place one on top of the other.

ORANGE EGGLESS CAKE (TEA TIME CAKE)

Ingredients:

Baking powder-1 tsp
Baking soda-1/4 tsp
Thick curd-3/4 cup
Orange essence -1 tsp
Orange zest- 1/2-1 tsp
Orange juice-1/4 cup
Salt-1/4 tsp
Oil-1/4 cup

 Method:
Pre-heat the oven @180°C/350°F for 10 mins.
