EGGLESS HONEY CAKE (IYENGAR BAKERY STYLE)

                           HONEY CAKE
Ingredients:
All purpose flour/Maida- 1 1/4 cup
Sugar-1/2 cup
Baking powder-1 tsp
Baking soda-1/4 tsp
Thick curd-3/4 cup
Vanilla essence -1 tsp
Water-1/4 cup
Salt-1/4 tsp
Oil-1/4 cup

For the jam icing:
Strawberry/Mixed fruit jam-1/2 cup
Honey-2 tsp
(Blend jam and honey in a mixie jar to make a puree)

For outer covering:
Dry grated coconut/Dry Coconut powder(Coarse)-1/2 cup
Sugar water-for sprinkling(Mix 2 tbsp of sugar with 1/4 cup of water)


Method:
Pre-heat the oven @180°C/350°F for 10 mins.
Make 2 thin cakes for a layer cake or make a big cake and cut into 2 equal horizontal slices.
1.Sieve all purpose flour, baking powder, baking soda together.
2.In a bowl,add sugar,curd and blend well.

3.Add water,essence,salt and oil and mix well.
4.Add the sieved flour spoon by spoon and fold with the wet ingredients.
5.Finish all the flour and blend by cutting and folding.
 
6.Grease a baking pan and transfer the mixture.
7.Bake @ 180°C/350°F for 25-30 mins.( or)
   until the tooth pick inserted in the centre of the cakes comes out clean.
8.When the cake reaches the room temperature,demould the cake from the pan and place in the working plate.
        

9.Place the first layer of cake and sprinkle some sugar water.
         
10.Apply jam filling and place the second layer and cover with jam filling all over and around the cake.

11.Sprinkle the grated coconut all over the cake.



12.Cut into slices.



13.Honey cake is ready to serve.

Note:
●If  you are making a single layer cake,you can apply the jam only on the top ,cut into pieces and dip the sides in sugar syrup and damp in grated coconut.
●Mine was a thin cake,so cut it vertically and place one on top of the other.

ORANGE EGGLESS CAKE (TEA TIME CAKE)

                  ORANGE EGGLESS CAKE
                    
Ingredients:
All purpose flour/Maida- 1 1/4 cup
Sugar-1/2 cup
Baking powder-1 tsp
Baking soda-1/4 tsp
Thick curd-3/4 cup
Orange essence -1 tsp
Orange zest- 1/2-1 tsp
Orange juice-1/4 cup
Salt-1/4 tsp
Oil-1/4 cup

 Method:
Pre-heat the oven @180°C/350°F for 10 mins.
1.Sieve all purpose flour, baking powder, baking soda together.
2.In a bowl,add sugar,curd and blend well.
3.Add orange juice,orange zest,essence,salt and oil and mix well.

6.Grease a baking pan and transfer the mixture.
7.Bake @ 180°C/350°F for 25-30 mins.( or)

8.Awesome tea time cake is ready to slice and serve.

           
                  



MANGO ICECREAM CAKE

                 MANGO ICECREAM CAKE
Ingredients:
Sponge cake-1 loaf

Vanilla icecream-2 cups
Mango puree-1 cup
(Or)Mango ice cream- 2-3 cups
Sugar syrup-1/4 cup(Mix 3 tbsp of sugar with 1/4 cup of water)
Cling wrap-to wrap the whole cake.
Pan- for setting the cake.


Method:
1.Blend the vanilla icecream and mango puree together and freeze it.
2.If u have a mango ice cream ,you can use it.

3.Slice the cake horizontally into 3 equal slices.
4.Place a cling wrap in the loaf pan leaving extra edges to cover the whole cake finally.
5.Place the first layer of cake.
         
                           
6.Sprinkle some sugar syrup all over and spread the ice cream evenly.
7.Place the second layer of cake and repeat the same till u place all the 3 slices.
8.Apply an even layer of ice cream on the top .
9.Cover it with the cling wrap all over and freeze overnight.


                   

10.Demould from the pan and cut into slices.



11.Serve it cool.
