WHOLE CAULIFLOWER (AIR FRIED)

         WHOLE CAULIFLOWER (AIR FRIED)



I've tried tandoori masala 

Ingredients:

Cauliflower-1 whole

Ginger garlic paste-1 tbsp.

Chilli powder-2 tsp.

Turmeric Powder-1 tsp.

Cumin powder-1tsp.

Coriander powder-1 2 tsp.

Pepper powder-1 tsp.

Curd/Yogurt-2 tbsp.

Rice flour-1 tbsp.

Corn flour-1 tsp.

Lemon juice -2 tsp.

Kasuri Methi-2 tsp. 

Salt- to taste

Oil- 2 tbsp.

Method:

1.Cut the leaves and edges of the cauliflower and keep it ready. 


2.Boil water in a vessel and add turmeric powder and salt.

3.When the water boils,add the whole cauliflower upside-down. 



4.Let it boil for 5 to 10 minutes. Make sure to cook only 50% in the hot water, or else it will start to break into pieces.

5.Remove and keep aside to drain the water(Make sure it is completely dry before applying masala)


6.In a wide pan add all the ingredients listed along with 1 tbsp. of oil and mix to make a paste.


7.Rub the prepared masala paste all over the cauliflower. 

8.Let it marinate for 15-20 mins.(The more you marinate, the more it tastes good)


9.Pre-heat the air fryer @350°- 400°F  for 10 minutes. 

10.Spray some oil and place the cauliflower and cook for 10-15 minutes.(Time differs in every air fryer)


11.Remove and spray some oil and turn each and every side every 5-10 mins until crispy and done.

12. Air-fried cauliflower is lip smacking ,crisp and healthy with less oil.





Note:

●Temperature can be reduced or increased based on the heat produced.

●The same recipe can be done with zero oil(Air fryer) and deep fried method(in pan)

●I felt the food becomes too dry without oil.So added little.

●Apply the masala outside the cauliflower for air frying method and very thin coating inside.(Sometimes inside masala may not be fully cooked if it is a thick paste)

●If you are deep frying, you can apply the masala inside also.

KOTHU IDIYAPPAM (VEG)

            KOTHU IDIYAPPAM 

Ingredients:

Idiyappam-5-6 (crumbled)

Onion-1 (thinly sliced)

Tomato-1 (thinly sliced)

Green Chilli-2 (cut into small pieces)

Mixed vegetables-1 cup (cut into small pieces)

(I've used beans,carrot,peas,sprouts,corn)

Ginger garlic paste-2 tsp.

Turmeric Powder-1 tsp.

Chilli powder-2 tsp.

Coriander powder-1 tsp.

Garam Masala-1 tsp.

Salt-to taste

Oil-2 tbsp.

Mint and Coriander leaves- to taste.


Method:

1.Crumble the idiyappam and keep aside. 

2.In a wide pan, add oil and add onion and saute till translucent. 


3.Add ginger garlic paste and saute till the raw smell goes off. 

4.Add tomato to it and mix well.


5.Add the spice powders and green chilli and blend.



6.Add the cut vegetables, mint and coriander leaves and mix well.



7.Close the lid and let it cook.

8.Once the veggies are cooked well,add the crumbled idiyappam and mix.(Do not over mix)



9.Spicy hot kothu idiyappam is ready to serve.














MAC AND CHEESE

                           MAC AND CHEESE 


Ingredients:

Boiled pasta-1 cup (boiled with salt)

Shredded mozzarella-1/2 cup

Onion powder-1/4 tsp.

Garlic powder-1/4 tsp.

Italian seasoning-1/4 tsp.

Red chilli flakes-to sprinkle.

Oil - 1 tsp.


Method:

1.In a wide pan,add oil and spread all over.

2.Transfer the boiled pasta and tap it to be firm enough.

3.Add the cheese all over.

4.Add garlic powder, onion powder, chilli flakes and Italian seasoning. 

5.Close the pan with a tight lid.

6.Leave it in simmer flame and cook till the cheese is fully melted.

7.Off the stove and serve hot.

8.Yum yum Mac and cheese is a divine treat for your kids and you as well.

MIXED MILLET PUTTU

Ingredients:

For steaming flour mix:

Millet flour-2 cups

(I've used equal measure of Sorghum(Cholam),Pearl millet(Kambu),Little millet(Saamai)Finger millet(Ragi).

Salt-to taste

For serving after steaming:

Grated Coconut -to taste

Jaggery powder/Sugar-to taste

Ghee- 1-2 tsp. per serving 

Cardamom powder-1 tsp. 


Method:

1.In a wide pan,add all the flour and dry roast for 3-4 minutes until you get a nice aroma.

2.Transfer into a bowl and sprinkle little salt.

3.Start sprinkling water little by little and mix well.


4.Break down small crumbs that forms while mixing. 

5.Blend everything well so that if you hold the mixed flour,it should hold a shape. 

6.If you break it ,the shape should come back powdery.

(If you add too much water,puttu will become hard)

(If you add very little water,puttu will become dry)

7.Apply little oil all around the puttu steamer. 

8.Place the inner plate and start filling with the prepared flour mix.

9.Close the lid and place in a whistle holder in a pressure cooker and cook for 10 minutes or until completely cooked. 

(You can see steam coming out from the holes of the puttu steamer when it is cooked)

10.Take out from the cooker and let it rest for 2-3 mins.

11.Place the puttu steamer in a plate and start pushing it out slowly from the back with the help of a skewer or stick.

12.Serve hot with jaggery/sugar,ghee,grated coconut and cardamom powder in a plate.


13.You can even mix all the items  together and serve.


14.Banana or kadala curry is a great combination with puttu.

Note:

•You can also use a damp cloth and transfer the prepared flour mix into it and cover it and steam in any steaming vessel.
