SPONGE CAKE 2 (IN CUPS)


                          SPONGE CAKE 2

Ingredients:
All purpose flour/Maida-1 cup
Sugar-3/4 cup
Butter-1/2 cup
Egg-4
Milk-3 tbsp
Baking powder-1 tsp
Baking soda-1 pinches
Salt-1/4 tsp
Vanilla/Pineapple Essence/Oil Orange-2 tsp

Method:
      Pre-heat the oven @180°c/350°F for 10 mins.
1.In 2 bowls separate the egg and the yolk.
2.Start beating the yolk nicely with the beater for 2-3 mins.
3.Add sugar to it and beat again.


4.Melt the butter and let it come to room temperature.
5.Add the melted butter to the egg and sugar mixture and beat well.
6.Add milk,salt and essence and mix.
7.In a sieve,add all purpose flour,baking soda and baking powder and sieve well and keep it aside.
8.Add the sieved flour little by little to the wet mixture and blend.



                     
9.Now start beating the egg whites in medium speed until it forms a firm peak.It takes 7-8 mins or sometimes little more.



10.Add the egg whites to the wet mixture and start folding.
11.Cut and fold the mixture slowly without escaping the air from the egg whites.
12.Finish up with all the egg whites.
13.Blend everything well together.

                            
14.Grease a pan or place a butter paper and apply butter all over.
15.Transfer the mixture to the pan till 1/2 to 3/4th of the pan,leaving some space for the cake to rise.
16.Place the pan in the preheated oven and bake for 25-30 mins.


           

17.Take out and insert a tooth pick or knife and it should come out clean.
18.If it sticks,bake for extra time
19.Sponge cake is ready to cut and serve.
